Heat oven to 350
Set out to soften while the cake bakes & cools:
- 3/4 c. butter, 3 oz. cream cheese
Mix together dry ingredients:
- 2 c. flour
- 2 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. soda
- 1/2 tsp. salt
In another bowl, mix together:
- 2 c. sugar
- 4 eggs
- Add:
- 1 c. oil
- 1 small can of pumpkin
Add dry ingredients to pumpkin mix
Pour into well-greased jelly roll pan (13x16)
Bake at 350 for 30 min.
Completely cool before frosting (~1 1/2 hrs.)

Frosting:
- Mix the 3/4 c. softened butter (I only used 1/2 c.) and 3 oz. cream cheese
- Gradually mix in 3 c. powdered sugar & opt. pumpkin pie spice to taste
NOTE: can add a little milk for consistency.
Cut into bars or squares of desired size.
