Harvest Stew (gluten free)

  • 3 Tbsp. corn starch
  • 8 c. beef broth
  • 2 Tbsp. vegetable broth
  • 3 stalks celery
  • 3 potatoes, chopped
  • 4 carrots, sliced
  • 1/2 onion, chopped
  • 1 c. butternut squash
  • 2 c. zucchini, quartered & sliced
  • 1-2 lbs. stew meat
  • 1 can corn (with juice)
  • 1 can of green beans (with juice)
  •  1 Tbsp. minced garlic
  • 2 bay leaves
  • 1-2 tsp. oregano
  • 1-2 tsp. basil
  • 1 tsp. chili powder
  • 3 Tbsp. Worcestershire sauce
  • 1 tsp. chili lime seasoning or season salt

Put all ingredients into a crockpot on low. Cook for 4-6 hrs. Move to a big pot. Add cornstarch to 1/2 c. water. Add to stew. Bring to a boil until thickened.
