- 3 Tbsp. corn starch
- 8 c. beef broth
- 2 Tbsp. vegetable broth
- 3 stalks celery
- 3 potatoes, chopped
- 4 carrots, sliced
- 1/2 onion, chopped
- 1 c. butternut squash
- 2 c. zucchini, quartered & sliced
- 1-2 lbs. stew meat
- 1 can corn (with juice)
- 1 can of green beans (with juice)
- 1 Tbsp. minced garlic
- 2 bay leaves
- 1-2 tsp. oregano
- 1-2 tsp. basil
- 1 tsp. chili powder
- 3 Tbsp. Worcestershire sauce
- 1 tsp. chili lime seasoning or season salt
Put all ingredients into a crockpot on low. Cook for 4-6 hrs. Move to a big pot. Add cornstarch to 1/2 c. water. Add to stew. Bring to a boil until thickened.
