Black Bean & Ham Soup

(very yummy! a little spicy.)

2 TBLSP. oil
1 onion, diced
2 garlic cloves
1 green pepper, diced

  • Saute above ingredients.

in a large pot, mix together:

5 c. water
1/2-1 tsp. cumin
3/4 tsp. cayenne pepper
2-3 cans black beans
salt & pepper
ham

  • add onion mixture and bring to a boil.
  • add 3/4 c. white rice (uncooked)- simmer covered for 20 min.
  • Garnish with sour cream and serve with tortilla chips
