Sweet & Sour Chicken

Sauce:
  • 1/2 c. apple cider vinegar
  • 3/4 c. sugar
  • 3/4 c. ketchup
  • juice from a can of pineapple chunks (set pineapple aside)
  • 2 slices of ginger root
  • mix above ingredients, then add:
  • 1/4 c. cornstarch + 3/4 water (premixed) to thicken sauce
Batter for the chicken:
  • 1 c. corn starch
  • 1 c. flour
  • 1/2 tsp. baking soda
  • mix above ingredients...
  • starting with 1 c. water, stir into dry ingredients, add enough water to make a pancake batter consistency
The amount of chicken you use is up to you- to feed my family of 6 (4 kids, 2 adults) I use about 3-4 chicken breasts, cut into bite size chunks- coat with batter and deep fry. Place in a bowl lined with paper towels.

I usually start the sauce, and let it simmer while I deep fry the chicken.

Serve chicken with steamed veggies (broccoli, onions, carrots, bell peppers, etc.) & pineapple on top of cooked rice, drizzle with S&S sauce. Enjoy!
