Red Bell Pepper Quiches

Make (or buy ;) pie crust dough (unbaked, double crust)

  • Oven to 350 degrees, grease 1 mini-muffin pan. Add a little crust in each well, flatten on bottom and up sides.
  • In a skillet, saute 2 red bell peppers (minced) and 1 TBSP. butter for about 10 min. - set aside

Beat together until well combined:
  • 3 eggs
  • 1 1/2 c. half & half
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
Add into each muffin cup, top with red bell peppers.
Bake for 12 minutes, let stand for 5 minutes.
