Mint Chocolate Brownies

Brownie mix - family size for a 9x13 pan
1/2 c. shortening
1/2 c. butter
1 tsp. vanilla
4 c. powdered sugar (approx. 1 lb.)
8 tbsp. milk
Mint extract
Green food coloring
1/4 c. (plus a little more) cocoa

  • Mix brownies according to the package directions and spread on a greased cookie sheet.
  • Bake at 350* for about 20 min. Let cool
  • To make butter cream frosting, cream butter and shortening. Add vanilla and sugar 1/2 c. at a time. Add milk a tbsp. at a time until very smooth consistency. (I used about 6 tbsp.)
  • Place half of the frosting in a separate bowl, leaving the rest in the mixer. Add to the frosting in the bowl about 2 drops of green food coloring and 1/4 tsp. mint extract. (You can add more or less of either of these according to your preferences)
  • Spread mint frosting on brownies
  • Add cocoa to remaining frosting in mixer. When incorporated, add about 2 tbsp. milk.
  • Spread on top of mint frosting being careful to to mix the colors.
